MALABAR AVIYAL
INGREDIENTS:
Carrots - 2
Raw Bananas - 2
Beans - 10 Nos.
Brinjals - 2
Drumsticks - 2
Coconut - 1/2 Cup Grated
Coconut Oil - 1+2 Tablespoons
Green Chillies - 3
Cumin Seeds - 1+1 Teaspoon
Garlic - 3 Pods
Fresh Curd - 1/4 Cup
Turmeric Powder - 1/2 Teaspoon
Salt - As Required
Curry Leaves - 2 Sprigs
PREPARATION:
1. Cut all the above-mentioned vegetables into one-inch pieces.
2. Take a vessel, add all the cut vegetables, then add one and a half cups of water. Add half a teaspoon of turmeric powder and required salt to the veggies and let it boil.
3. Once the vegetables are boiled, keep it aside.
4. Now, take a blender, and add half a cup of grated coconut, one teaspoon of cumin seeds, three green chillies, four pods of garlic and blend it coarsely.
5. Then, add the blended items into the boiled vegetables.
6. Along with the boiled vegetable mixture, add 1/4 cup of fresh curd and keep it in the stove until the raw smell of the coconut goes off.
7. Once done, take a kadai, and add two tablespoons of coconut oil. Then, add one teaspoon of cumin seeds and two sprigs of fresh curry leavcs and temper it and pour it on the vegetable mixture.
8. Switch off the stove. For added flavour, add one more teaspoon of coconut oil on top of the aviyal.
- The delicious Malabar Aviyal is now ready to serve along with rice.
