Garlic Chutney

                           Garlic Chutney

Ingredients:

Garlic                         - 25 Cloves (Peeled)

Dry Red Chillies      - 5 Nos.

Grated Coconut      - 5 Teaspoons 

Curry Leaves           - 3 Sprigs

Tamarind                 - A Very Small Piece 

Urad Dhal                 - 1 Teaspoon 

Sesame Oil                - 3+2 Teaspoons 

Mustard                     - 1 Teaspoon 

Salt                              - As Required 

Preparation:

- Take a pan and add three teaspoons of sesame oil.

- Add the dry red chillies and the small piece of tamarind and slightly sauté it until it turns brown colour.

- Then add the peeled garlic cloves in the oil and sauté it until it turns brown and the raw smell goes off.

- Add the curry leaves in the oil until they turn crispy. Also, add the five teaspoons of the grated coconut until it turns brown colour.

- Now, take a blender and add all the sauted ingredients one by one: the dry red chillies, the curry leaves, the garlic cloves, the grated coconut and the tamarind. Let it cool for sometime. Then, add the required salt and water in the blender and blend it coarsely.

- Once done, temper the garlic chutney by adding two teaspoons of sesame oil and one teaspoon of mustard seeds and one teaspoon of urad dhal along with some curry leaves. The delicious garlic chutney is ready to serve with idlis or dosas.
