Moong Dal Payasam

                  Moong Dal Payasam 

Ingredients:

Moong Dal                        - 200 gms.

Tapioca Pearls/Sago        - 50 gms.

Cashew Nuts                     - 100 gms.

Raisins                                - 100 gms.

Ghee                                    - 50 ml.

Jaggery                                - 200 gms.

Cardamom Powder           - ½ Teaspoon 

Coconut Pieces (Roasted) - 3 Teaspoons 

Thin Coconut Milk             - 100 ml.

Thick Coconut Milk           - 50 ml.

Preparation:

- Take a pan, add a teaspoon of ghee and roast the moong dal until its raw smell goes off.

- Now, add enough water and soak the moong dal for half an hour.

- After half an hour, and required water and boil well the moong dal. Keep it aside.

- Likewise, add required water and boil the tapioca pearls . Set it aside.

- Now, take a vessel, add the pounded jaggery and half a cup of water. Wait until the jaggery melts. Filter the extract and keep it aside.

- Take a blender and extract the coconut milk as said below: 

Thin Coconut Milk - 1 Cup

Thick Coconut Milk - ½ Cup

- Now take a pan, add three to four teaspoons of ghee. Roast the cashew nuts, raisins and the coconut pieces well in the ghee.

- Add the boiled moong dal, boiled tapioca pearls and add the cardamom powder into the mixture.

- Then, add the melted jaggery mixture.

- Finally, add a cup of thin coconut milk and half a cup of thick coconut milk one after the other.

- Keep the stove in simmer and let the mixture boil for five to seven minutes.

- Once done, switch off the flame. The delicious 'Paruppu Payasam' is ready to serve.
